In this paper Justus von Geibler, Kora Kristof and Jan Walter highlight how sustainability demands can be integrated in early innovation phases and how new markets for sustainable products can be explored. The paper describes related experiences from a research project on future market development for timber in the building sector, conducted for the German Ministry for Research and Education.
To what extent can designers direct their professional practices towards serving the common good? Design constitutes itself anew with every project. Each project is both conditioned and made possible through a unique constellation of actors, timeframes, objectives, skills, etc. which arise from both social values and political agendas. We discuss the different approaches of two selected design projects by the authors, and the respective strategies and methods. While the designers' ambition in both projects was certainly to change an existing situation into a preferred one - the first by the means of interactive user engagement, the second through the idea of semi-finished product semantics - we emphasize on the challenges and ambiguities arising from the evolutionary process of design, aiming at the common good. Eventually we conclude that design processes can serve as a tool to debate rather than create the common good.
Many concepts are able to initiate an increase in resource productivity in enterprises and supply chains – although some of these approaches do not directly address resource efficiency. From these instruments, we derived seven important set-screws, pointing at the most important starting points for resource productivity. Considering the differences of the examined set-screws in general and of the approaches lying in the background in particular, the existing portfolio of instruments seems broad enough to successfully implement instruments aiming at an increase of resource efficiency in the enterprises. However, it is necessary to adapt the selection of instruments to the conditions of the specific enterprise.
Sustainable out-of-home nutrition can help achieve overarching sustainability goals through a transformation in demands of consumers in this growing market. Studies indicate that individual food choice behaviours in out-of-home settings relate to a wide set of personal, social and situational factors. These factors can be influenced by various intervention strategies. In an expert meeting and a focus group we invited caterers and consumers to generate, discuss and evaluate various practical intervention ideas. Both parties largely perceive the explored ideas as useful and agree on key intervention ideas. Overall caterers and consumers state to prefer nudging strategies over information and participation interventions.
Food labels are able to support consumers in making more sustainable food choices in out-of-home consumption situations. Thereby, the effect of changing consumption behaviour depends on the format of food labels and on the information it provides. In order to assess the importance of the amount of information as well as the design of food labels displaying sustainability aspects, we test different formats of food labels using a best-worst choice design. So far, no research tested a variation of information depth while keeping label designs fixed. We find clear preferences across both dimensions. Results indicate that consumers regard labels with a higher information depth as more helpful in order to choose a sustainable meal. For the label design it became obvious that the slider-design is preferred over footprints and traffic light label design.
The field of nutrition is facing numerous social, ecological and economic challenges in the coming decades. The food industry belongs to the most significant economic sectors worldwide and the increasing population of 9 billion in 2050 will cause a growing demand on food. So far, changing lifestyles, especially the global rising consumption of meat and dairy products are increasing environmental damage. Moreover our health and wellbeing are the direct result of healthy or unhealthy nourishment and influence follow-up indicators like individual and public health, the expense of the health sector and work productivity.
The material footprint is a tool to measure and optimize the resource consumption of both products and their ingredients and the production processes along the whole value chain. It covers the whole life cycle of the products, from the extraction of raw materials to the processing industry, distribution, consumption, recycling, and disposal. In order to decrease resource consumption to a level in line with the planetary boundaries, the material footprint of household consumption should achieve a level of six to eight tonnes per capita in a year by 2050. This means a reduction in natural resource consumption by a factor of 5 to 10 in Western European countries. In order to ensure a decent lifestyle for all people in 2050, also the material footprint of nutrition has to be reduced significantly by 2050.
The paper shows the relevance and role of nutrition in the overall material footprint of households on the basis of existing studies on the overall resource consumption caused by household consumption. Quantified meal and diet examples are given. It also discusses the causes of food waste and raises the question how a reduction of food waste is possible and can help decreasing the resource consumption in the food sector.

Domestic sustainability innovations are considered to play a key role for pathways to sustainable consumption. The paper shows how open innovation processes can lead to such sustainable innovations, by means of an experimental and interactive infrastructure. It presents how – based on results of the LivingLab project conducted at the Wuppertal Institute within a European Consortium (Lead TU Delft) - currently an extended Sustainable LivingLab approach is developed and applied in two joint research projects at national and international level. To conceptualise this approach, we refer to recent proceedings in innovation and sustainability research, i.e. practice theory to analyse sustainable product design. Focusing on technical solutions and individual behaviour while assuming people's needs as fixed entities, disregards the dynamics of everyday practices in which technologies themselves create needs. Therefore, the consumer's position should be strengthened through userdriven innovation. LivingLabs are combined lab-/household systems, which put the user, i.e. the home occupant, and value chain related actors (producer, handicraft, etc.) on centre stage in the innovation process. We introduce its research agenda and the Three Phases Model of research. We hypothesise that at the end of this userintegrated innovation process developed products have a higher chance of successful diffusion. To illustrate this, we show how the LivingLab infrastructure is employed for the German InnovationCity Ruhr and how it can promote the development of user-centred sustainable consumption strategies.
